Annoyed and baking Chocolate Cake

Last night I was annoyed... She didn't think it was pertinent to add money to her phone. She went to my house, played with my cat (the Man-Whore) and went to sleep. So when I was looking for her to pick me up, she said she would, she was no where to be found with no way of contact.

She didn't know that I would would worry. She just overslept. If anything had happened to her, the next of kin would have found some way of getting in touch with me.

REALLY!

Keeping all emotions in check, except for one outburst, I said very little. We ran her errands. She bought another pack of smokes, which only annoyed me more. We went back to my place and I started to bake. I did offer to make dinner before I started. She didn't know what she wanted to eat. She sat on the bed looking like a wounded puppy. So I got started...

I have been looking for a new chocolate cake recipe. The one I have been using is okay, its just boring me and not really able to stand up to everything I like to do to chocolate cake. I needed something more robust, something heartier but not to dense.

When in doubt go to epicurious. I love them. I want to work in there test kitchens, if they have them. Some of their recipes are really complex and make you think. They make you get out of your own head and follow the directions exactly (well if you are a perfectionist like me).

Giant Chocolate Cake with Bittersweet Chocolate Ganache and Edible Flowers is the recipe. A very simple recipe yet complex enough to make think. I made it cake in a big bundt and little bundts, given to me by dear friends. It came out nice and moist. I didn't make the ganache or the flowers. I just wanted the cake. I did, in the end, make a simple glaze for the top.


The cake is dark, rich and moist. I bet it could handle the weight of  my chocolate mousse with a ganache top.  Hmmm...  

Things to remember no matter how annoyed you get:

  • Butter: always unsalted and always remember to take it out of the fridge before you leave to run errands. Otherwise you end up either having to beat it soft with a heavy rolling pin (that can make you friends and neighbors afraid of you) or you melt it in a pan and pray that the warm melted butter doesn't cook the eggs and ruin your cake.
  • Always read your recipe to know what goes first. It may also help you in remembering to take the butter out the fridge.

Welcome!

Welcome!
This is a new blog about me. What's on my mind. What mood I'm in. Whose pissing me off. But most importantly what I am baking! I am finding that baking is helping to keep me sane. I may venture into other types of recipes and talk about techniques and products that I have found helpful, that will be for later.

Questions and Answers:
Why "Topless Baker"? Well, I thought Naked Baker would give those that know me a bad visual. Do Not Worry! There will be no pictures of me topless or naked on this blog (thats for a a different blog and a more put together body).

Do I bake topless/naked? Yes I do! Why? Because it creates less laundry and sometimes insomnia has a hold of me and I need to create instead of trying to sleep.
